Flavorful White Chili

Chili is a warm filling and wonderful dish that is comforting on a cold winter’s day. This is a great take on an old classic that I think that you will really enjoy.
Ingredients -

1 Pound Dried Great Northern Beans (rinsed and sorted)
4 Cup Chicken Broths
2 Cup Onions (chopped)
3 Garlic Cloves (minced)
2 Teaspoon Ground Cumin
1 1/2 Teaspoon Dried Oregano
1 Teaspoon Ground Coriander
1/8 Teaspoon Ground Cloves
1/8 Teaspoon Cayenne Pepper
1 Can Green Chilies (4 ounces, chopped)
1/2 Pound Boneless Skinless Chicken Breast (grilled and cubed)
1 Teaspoon Salt
3/4 Cup Mexican Cheese Blend

 
Preparation:

1. Place beans in a large pot.

2. Add water and cover by 2 inches.

3. Bring to a boil and boil for 2 minutes.

4. Remove from heat and cover.

5. Let stand for 1 hour.

6. Drain and rinse discarding liquid.

7. Place beans in a slow cooker.

8. Add the broth, onions, garlic and seasonings.

9. Cover and cook on LOW for 7 to 8 hours or until beans are almost tender.

10. Add the chilies, chicken and salt.

11. Cover and cook for 1 hour or until beans are tender.

12. Serve with cheese.

Jalapeno Chile

If you don’t like green chilies you can replace them with jalapeno peppers.

Mexican Cheese Blend
If you aren’t fond of Mexican cheese blend, Monterey Jack cheese or Mozzarella cheese taste amazing as well.
